This sounds good. I have the same recipe for the "fool-proof" crust and it is the best ever. It actually makes four crusts so I lay out four flat ones and place waxed paper between each and freeze them for when I need them. As for the filling it sounds a lot like my Peach Cream Pie. I might try your recipe and put in sliced peaches to see what happens.
